Most people use their ISP's DNS servers. Some people use third party servers like Google's 8.8.8.8 or Cloudflare's 1.1.1.1, because they may be faster and more secure. However, there is no need to sign a EULA or trust a third party at all when it comes to DNS. You can easily run your own DNS server! The only downside I can think of to running your own DNS is that if everyone did it, we would probably overload the root DNS servers... But, not everyone will do this, and we should really look into using a decentralized, distributed name service like IPNS anyway.

To run this server, just run this on your Docker server:

sudo docker run -d -p 53:53/udp evanstucker/docker-unbound

Then configure your devices to use your Docker server's IP address as their DNS server.

If you get an error like this:

docker: Error response from daemon: driver failed programming external connectivity on endpoint nostalgic_shockley (5d90c3059fb598fd937a09587cdd03cdf8b5f6292a9f0fb2e7a734199a8cba24): Error starting userland proxy: listen udp 0.0.0.0:53: bind: address already in use.

Then you need to troubleshoot what's using that port. Here's a command that might help:

sudo ss -lpun | grep ':53\W'
