You can pandoc command in the following way. This example is markdown to docx conversion but any combination must work.
In .docx case, you can use pagebreak features. Please use \newpage in the pagebreak position.
docker run --rm -v "$(pwd):/workdir" --user $(id -u):$(id -g) fmlorg/pandoc pandoc -f markdown -t docx --filter=pandoc-docx-pagebreakpy index.md -o index.docx

\newpage

the next page 2 starts here after the page break.
