You can change server charset and collation by setting env

docker run -it --rm --name mariadb
-e CHARACTER_SET_SERVER="utf8"
-e COLLATION_SERVER="utf8_general_ci"
-e MYSQL_ROOT_PASSWORD="P@ssw0rd"
-p 3306:3306
