The start password is generated while installation. It can be echoed with:

cat /opt/sonatype/sonatype-work/nexus3/admin.password && echo

Run with persistence:

docker run -p 8081:8081 -d -v nexus-data:/opt/sonatype/sonatype-work/nexus3 kimschi/pi-nexus3
