See his github for all the options but here are the basic variables I use:

docker run --restart always -d
-e LEAF_USERNAME="useremail"
-e LEAF_PASSWORD="password"
-e LEAF_TYPE="olderUSA"
-e MQTT_HOST=yourhost
-e MQTT_USER="mqttuser"
-e MQTT_PASSWORD="mqttpassword"
-e UPDATE_INTERVAL_MINUTES=120
--name leaf2mqtt
