xhost +local:docker

Run the docker container. Your pwd will be mounted to /root/project directory.

docker run -it --rm \
-e DISPLAY=$DISPLAY \
-v /tmp/.X11-unix:/tmp/.X11-unix \
-v $(pwd):/root/project \
lyx-container

the minimal image doesn't contain texlive-full.
