This will create a docker container running java 16 which will allow geyser to run properly. The geyser is installed in the directory /opt/geyser-data/. You can go inside the geyser-data directory and create the config.yml and configure it and save the changes. After that you may restart the docker container so that it starts with the new configuration.
Run the Docker Geyser with default config. Make sure to access the docker container and edit the /opt/geyser-data/config.yml so that it points to the correct minecraft server:

--restart unless-stopped \
--publish 19132:19132/udp \
rodger753/geyser-minecraft:ubuntu_64bits_pc_1.12.2_to_1.18.0
provide the geyser-data directory. Make sure to include the Geyser.jar and the config.yml so that you can point the geyser server to the right server ip and port.
