To start a UHPPOTE simulator using the base Docker image:
docker pull uhppoted/simulator:latest
docker run --detach --publish 8000:8000 --publish 60000:60000/udp \
--name simulator \
--mount source=uhppoted,target=/usr/local/etc/uhppoted \
--rm ghcr.io/uhppoted/simulator
