I added the extra script 40-modify-vite-env.sh in /docker-entrypoint.d/ to perform:

Step 1: Finds all files with VITE_APP_ variables Step 2: Extracts and displays the variable names and their current values from files Step 3: Gets all VITE_APP_ variables from shell environment Step 4: Replaces the file values with shell values

Now you can set all VITE variables using docker -e "NAME=VALUE" instead of rebuilding images with new .env
